Apple pie...
Yep...I baked my first apple pie yesterday, french apple pie to be precise. Enjoyed it with my neighbour,the Tans upstairs. Yummy! Dear hubby had 3 slices and well, verdict is I'll bake it again. Here's the recipe if you like to try bake one yourself too...
French Apple Pie

Pastry:
200g plain flour, sifted
100g butter
90g icing sugar sifted
1 egg yolk
Filling:
70g butter
70g castor sugar
1 egg, beaten
70g ground almond
20g plain flour, sifted
3-4 green apples, peeled, cored and sliced
Glaze :
2 tbsp apricotjam, heated until soft
- For the pastry, rub butter into flour until mixture resembles bread crumbs. Add icing sugar and mix well. Add egg yolk and mixed until a dough is formed. Chill in the fridge for 15 minutes
- For the filling, cream butter and sugar, add egg and beat till light and fluffy, fold in almonds and flour.
- Roll out the dough to 3mm thickness and use it to line a 22cm pie dish, pour in the filiing and level up.
- Arrange apple slices on top and bake at 190*C for 40 – 45 minutes (bake on the lower shelf to prevent the top from being too brown.
- Remove from the oven. Glaze with apricot jam.
